OK. So yes, I am on Nutrisystem…but every once in awhile, you gotta treat yourself.
The man and I have been reminiscing about when we met (11 years ago this month!) and pretty much, how much we miss having an actual Fall. For me this meant the scents and the crisp mornings where I would walk to my bus stop heading to work. So young, so free and ready to explore every possibility life had in store for me. Many of these mornings included either a pumpkin muffin or pumpkin flavor coffee. To me, Pumpkins ARE Fall.
Being in Los Angeles, I rarely wake up to a crisp morning and days are usually warm enough to wear tshirts and flip flops well into December and I love that about L.A. so how would we bring the best combo from both?
PUMPKIN PIE MILKSHAKE!!
Crazy as we are, Sat night our daughter was at grandma’s (love my mommy!), and we decided at 1am to come up with some sort of recipe. Thank god that man knows his way around the kitchen cause all i said was um.. ice cream? LOL. Sadly that night, our local Ralph’s was out of Pumpkin Filling so we made Nutella-Banana Shakes (if you want the recipe, let me know and I will do a follow up post!) but the next day I sent him to Trader Joe’s and voila- PUMPKIN!
Here is our Pumpkin Pie Milkshake for two:
1 small can (the 8oz? 12oz? you know- the small one) pumpkin canned
about 1/2 cup- 3/4 milk ( we used Almond milk)
1/4 tsp vanilla
1/2 tsp cinnamon
a pinch of cloves
a pinch of nutmeg
1-2 tbspn brown sugar
2-2 and 1/2 cups of slightly softened vanilla ice cream (softened is best for blending- just leave it out about 10-15 mins before blending
1-2 graham crackers
Throw everything but graham crackers into a blender. Start with less milk and then slowly add more, if needed. Top with whipped cream and sprinkle with crushed graham cracker crumbs before serving. YUM.
