You see that picture above? That was what my husband and I looked like before we were parents. Oh, that was also one of our dates. I kinda remember what those were like. Actually, that was my birthday 2006…and about a month later I found out I was pregnant. We love our girl, she is truly the light of our lives but every once in a while, mommy and daddy need some time to remember how it all began, just a girl, and a boy…ridiculously into each other. But, we now have hectic lives, crazy schedules and, you know, a five year old to get to school on time (7:5oam…seriously, I think the schools do it cause THEY HATE PARENTS) and blah blah… you get my drift. Date Night= Impossible.
But as I watched my beautiful man, eyes shining in the glare of the Halo 4 screen, yelling into his headset to “get the flag, come on… no no NOOO…” I thought, I’m bringing date night home. Cause I guess Halo is sexy? I grabbed something other than yoga pants (he has Halo, I have yoga pants… it works) and said “clear the table, we’re going on a date,” to which he replied, “But we’re winning!”
I headed to my local Albertson’s cause I love how organized the store is, plus their fresh produce is amazing.
Unsure of what exactly I was doing, I got inspired walking by tortilla chips and salsa. I headed straight for the soups and sauces section and there they were in the bottom row among lots of powder rubs and sauces and I got it! (You can see my shopping trip on this Google Plus Album!) I had been dying to try the New Campbell’s Skillet Sauces. They have six scrumptious varieties: Creamy Chipotle, Fire Roasted Tomato, Toasted Sesame, Marsala, Scampi, and Thai Green Curry. I knew I wanted the Creamy Chipotle and was pretty stoked to see that there was an in-store coupon for the month of January for $2.00 off available right in the aisle. I grabbed the coupon and the sauce and I was ready to pay up, head home, and give my man and me some non-halo, non yoga pants time. Our little one was already TKO for the night, so this was just us. Weird. But, we enjoyed our meal, talked, laughed, made fun of our cats (they’re pretty special) and for a split second, we were those two kids in Philly who couldn’t keep their hands off each other. Well, after the food anyway.
Easy Chipotle Chicken Burritos for Two (#Dinnerin15)
2 boneless-skinless chicken breasts, chopped up
1/2 cup of white rice, dry
1/2 cup of shredded mexican cheese blend
1/2 cup Pico de Gallo (store bought or Home-made)
2-4 Flour Tortillas
1 Campbell’s Skillet Creamy Chipotle Sauce
1 tbsp Vegetable Oil
- Make Rice According to Directions, set aside
- Cut up Chicken Breasts and heat oil in skillet.
- When Oil is ready, toss in chicken. Cook chicken while flipping and tossing about 5-7 mins.
- Add Campbell’s Sauce, bring down heat, stir and cover and let cook for about 5-10 mins.
- Remove chicken from fire, set aside.
- Heat Tortillas according to directions (we just toss them or the burner and flip by hand old-school).
- Lay one tortilla on a plate, spoon 2-3 spoonfuls of chicken mixture ont0 tortilla. Spoon 1-2 spoonfuls of cooked rice. Add Pico de Gallo to taste, same with shredded cheese.
- Fold one in in, and then the two sides. You now have an open burrito!
