Battling Cold and Flu Season- With Caldo and Sleep

I thought I had escaped it this year…it was mid-February and my entire family had remained pretty germ free the whole season. Then, it happened. I got a fever and a week later my daughter had one too. Now, my husband is sick. Cold and Flu season hit our home with a vengeance.

Over the years I have been able to develop my own ways of battling the germs, mainly my mom’s good ol’ Caldo con Pollo. That’s right…. mom’s chicken soup. It’s an easy recipe and my secret weapon, well that and sleep. Yes, SLEEP. With the Caldo, you get some much needed energy to fuel your body into battling the sick germs that are invading your body, and with sleep, you give your body the rest it needs as it fights to regain it’s healthy state back. It’s how I was able to get a little relief when it hit our home.

Caldo con Pollo is easy. We take a big pot, add in water, onions, tomatoes, garlic, celery, carrots, one small chicken boullion cube, and about a half chicken, cut into pieces…and just boil. Add salt and pepper to taste. Sometimes, when serving, I throw in some cooked white rice, and add a lot of lime juice. It tastes delicious and for some reason, makes me feel better. After I drink a little, I grab a blanket and pillow, and lay down. My husband watches our daughter, and I sleep… I sleep for hours and hours. Each day I wake up a little more energized than the last…and that is how we make it through the germs. A little soup, and a whole lot of sleep.
