Summer at my home means fun and people. LOTS of people. Child-people, adult people…all people. That’s right, my home is THE place to be at apparently. I wish I could say it was my awesome personality but alas, no… I have a daughter who is a social butterfly, an Xbox and Satellite TV. We’re popular alright. That means two things: we always have treats on hand and we’re always ready for a party.
Everyone that comes by has a different palette so I like to have things out that all my guests can enjoy, and being a mom, I also try to infuse a little bit of healthy treats wherever I can. I admit it, I sneak it in. Most recently I did this by putting out Classic Lay’s Potato Chips and Tostito’s Scoop Tortilla chips and pairing them with two amazing, fresh and slightly healthier dips. One was the Black Bean Corn Bites, which you can find on the Frito-Lay website along with many other dips, dishes, treats and more. Black Beans, corn, cilantro…mmm, mmmm! I was salivating as I made it (and may have had
a lot a little before serving).
That Black Bean dip with the Tostitos Scoops? YUM! The next dip I made sure to put out for my guests was the biggest hit. Being Latina, my salsa and sauces always have a little kick to them…and so I made this sweet, tangy with a hint of spice Pineapple Tomatillo dip. Try it with my recipe below and see how your guests rave about your dip for days!
Pineapple Tomatillo Dip
2-3 coarsely chopped tomatillos
1 jalapeño, deseeded and diced
1 coarsely chopped red onion
Half a pineapple coarsely chopped
2-3 dashes of salt
1/2 a bunch of fresh cilantro
1-2 Garlic cloves
- Add all ingredients into blender or food processor and low pulse for 15 seconds, shake, and pulse 5 more times. You want it a bit chunky. For added flavor, roast tomatillos for 10 minutes at 400 degrees. Take out cool, and add to blender with all other ingredients. YUM!
